Pot Pies Are Always in Season at Ken’s Kickin’ Chicken

Ken Rothwell’s newest business sells his chicken pot pies at retail on Franklin Street; restaurants and supermarkets are buying in bunches.

Ken Rothwell started selling chicken pot pies last December as a way to keep busy in the slow months of his catering business.

A year later, he’s sold 35,000 pies and counting.

Rothwell and business partner Chris Ingemi opened Ken’s Kickin’ Chicken as a retail store for prepared foods and pies at the location of Rothwell’s other business, Rothwell’s Custom Catering, on Franklin Street behind the North Street gas station and across from HMA.

The only complaint from customers, Rothwell says, is the business is hard to find. Once they come for one of his chicken pot pies, they always come back.

Rothwell, who owned Taste of Thyme in Salem before founding his catering company six years ago, said his pies “blow the competition away.”

He backs up his bravado, by pointing to positive reviews on Yelp! and the thousands of fans he has on his Facebook page, plus good reviews in the Boston Globe and North Shore Dish.

After checking out the competition by sampling their pies, Rothwell says, he made one of his own with fresh cut carrots, big chunks of white chicken, gravy, and a crispy crust.

“I’m looking at it and I’m thinking — that looks pretty… good,” he said. “We don’t put sodium [or] nitrates in them.  Everything is fresh.”

Chicken Pot Pie Recipe if you can’t make it to Ken’s Kickin’ Chicken

“A delicious chicken pie made from scratch with carrots, peas and celery. A delicious and heartwarming meal.”
Ingredients:
1 pound skinless, boneless chicken
breast halves – cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
Directions:
1. Preheat oven to 425 degrees F (220 degrees C.)
2. In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
3. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
4. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
5. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Chicken pot pies winning taste tests

There’s lots of cluckin’ about Ken’s Kickin’ Chicken Pot Pies of Salem.

A Facebook page is filled with good reviews. A van with the red-and-white Kickin’ Chicken logo hit the road.

A guy dressed in a yellow chicken suit stands on Route 114, drumming up customers for the pies made from scratch in a commercial kitchen tucked behind a gas station on Franklin Street.

“It’s gone better than I ever imagined,’’ said Ken Rothwell, noting the customer line stretched out the door one bitter Saturday. “I didn’t do this to get rich. I did this so I didn’t have to lay my employees off.’’

Rothwell, who lives in Merrimac, said he usually has to lay off his five chefs from his catering business in January and February, when the wedding and corporate events slow down. But this winter they’re all chopping celery, peeling carrots and onions, and boning chickens for the all-white meat pies. Rothwell, a father of three, didn’t like the frozen chicken pie his kids wanted one night for dinner. On a whim, he whipped one up from scratch.

He cut all-white chicken meat into inch-thick cubes, and added carrots, onions, peas, and Canadian celery. “That’s the best. There is no string in it,’’ said Rothwell, 44, who grew up in Salem. “The crust was layer after layer of flakiness.’’

Soon after, Rothwell decided to size up his competition. He drove around the North Shore and the Merrimack Valley, buying chicken pot pies from bakeries and grocery stores. He invited eight sets of neighbors to his house for a blind taste test. “They all liked mine the best,’’ he said.

He quickly put his five chefs to work on the Kickin’ Chicken line. So far, Rothwell has sold about 1,600 pies, including 300 one Saturday. He’s taken on a partner, Christine Ingemi, and hired a marketing assistant.

“I have five guys working all day here,’’ Rothwell said. “To me, that’s what matters the most. We’re all working.’’

Now that’s something to cluck about.

Put on your trench coat and fedora. Drive to Salem on Route 114. If you’re sure you haven’t been followed, turn in between the Hess station and HMA Car Care. Turn left on Franklin, go to the end, and park. Proceed to Ken’s Kicken Chicken and score a large pie with stuffing…

Okay, so it’s not as clandestine as all that, but we were intrigued by the mainly word-of-mouth business Ken Rothwell of Rothwell’s Custom Catering has built up around his chicken pot pies.

Rothwell sold his Salem restaurant, A Taste of Thyme, four years ago and now runs the catering business out of a large industrial kitchen on Franklin Street. A few months ago, frustrated by the quality of available pre-packed chicken pies, his wife challenged him to come up with something better. Pretty soon, his friends were clamoring for them, and word spread from there.

Today, Rothwell is selling 1,000 pies per week out of the catering kitchen and has added a variety of high-quality prepared foods including 15 kinds of soup (the clam chowder is famous among those in the know), shepards’s pie, macaroni and cheese, meatloaf, and chicken broccoli ziti. Cold offerings such as Waldorf chicken salad (delicious), horseradish cheese spread, and hummus are also available, along with several desserts.

But the pies are the stars of the show, or perhaps we should say the heavyweights—the large pie with stuffing weighs five pounds. And we’re happy to report it lives up to the hype. The huge chunks of white-meat chicken are moist, the sauce is rich but not cloying, the vegetables are cooked perfectly (carrots and peas, tender but not mushy), and the stuffing is tasty with great texture. The crust puts it over the top—buttery and delicious.

We bought a large pie with stuffing, which is $16.95 and feeds four to six. Fresh pies take 35 minutes to bake and will keep for five days in the fridge. Frozen pies will keep for several months and take about an hour to bake. The pies are available in small ($8.95 with stuffing, feeds three), without veggies (chicken and stuffing only) and without stuffing (chicken and veggies only).

For now, the pies are not available in stores, and we recommend buying them during the week if you can. The lines are long on weekends, and they sometimes run out. Look for new offerings soon, including a chicken pie with cornbread topping and a buffalo chicken pie.
